Easiest Gluten Free Banana Bread with Choc Chips

2 1/4 cups almond flour

2 teaspoons of baking soda

4 tablespoons of brown rice or teff flour

pinch of salt

1 teaspoon of cinnamon

1 tablespoon of apple cider vinager

1/4 cup of dark chocolate chips (optional)

1/2 cup of activated buckwheat or gluten free oats (optional)

3 ripe bananas

1/4 cup maple syrup

4 organic eggs

Preheat oven to 150 degrees Celsius and grease a rectangular bread or loaf tin with coconut oil.

Place bananas, eggs and maple syrup in a food processor and pulse until combine.

Add the remaining ingredients (except oats, buckwheat and choc chips) to food processor and pulse until evenly mixed. Be careful not to over mix.

Gently fold though oats, buckwheat and choc chips, if using.

Pour into loaf or bread tin and back for 45 minutes for until a knife draws out clean.
