Twix Slice

GF/ DF/ can be VG if use plant based protein powder


1 cup almond meal

1 Tbspn maple syrup

1 Tbspn coconut oil (or olive oil)

1 Tbspn vanilla protein powder

1 tsp vanilla extract


2/3 cup smooth peanut butter

3 Tbspn maple syrup

1 Tbsp coconut oil (or olive oil)

250g Dark chocolate for melting

Preheat oven to 180 degrees celcius

To make the base:

Add all the base ingredients to a food processor and blitz until well combine

Transfer into a small baking tray lined with baking paper

Cook in oven for 12-15 minutes

Once golden, remove from oven and allow to cook but keeping in tray

To make caramel:

Add all ingredient to food processor and pulse until combined (careful not to over process or will go lumpy)

Note: if peanut butter or coconut oil are hard, put in microwave or put in a bowl of boiling hot water to soften.

Add caramel on top of the cooked base and smooth out evenly.

Melt dark chocolate in a ceramic or glass bowl, over a pan or bowl of boiling water.

Once completely melted, allow to slightly cool and drizzle on top of the caramel.

Pop in freezer for 2 hours to set.

Cut into slices or cubes and store in freezer.
