3 peaches, chopped into quarters
1 sprig of fresh mint (optional)
Grilled peaches, for serving
1. Chop three peaches into quarters and then put in the freezer until frozen.
2. Once the peaches are frozen, remove them from the freezer and place into a blender with the mint leaves. Pulse until the peaches turn into sorbet consistency.
3. Scoop the sorbet into cocktail classes and serve with a wedge of grilled peach and extra mint.
