1 cup steamed and mashed sweet potato (250g cooked weight)
3 tbs coconut oil
pinch celtic salt
2tsp maca powder
3 eggs, lightly beaten
¼ cup maple syrup
¼ cup coconut flour
½ cup raw cacao powder
½ cup walnut pieces (optional)
¼ cup raw cacao nibs (optional)
1. Whisk together coconut oil ,vanilla, cinnamon, salt, maca, eggs and maple syrup.
2. Add coconut flour, sweet potato and raw cacao and mix until well combined.
3. Place in lined baking tin and pop in a 180C oven for 25min.
4. Remove from the oven and leave to cool. Once cool, slice and enjoy.
